Recipe Ideas in Honor of National BBQ Month

                                                                          

 

May is National BBQ Month! Here at Ralph Thayer Automotive, we look forward to firing up the grill and enjoying good food with family and friends. Here are a few recipes sure to make your outdoor dining experience tasty.

Grilled Steak with Caper Sauce

For this steak with a twist you need 3 T-bone or flank steaks and for the sauce: 2-cups Italian parsley chopped, ¼-cup capers, 2 T red wine vinegar and 3 cloves garlic, pressed. Grill the steaks to the desired doneness and serve with the caper sauce.

Honey Mustard Grilled Chicken

This yummy recipe makes a great main dish. You need 4 skinless, boneless chicken breasts and for the sauce: 1/3-cup Dijon mustard, ¼-cup honey, 2 T mayonnaise and 1 t steak sauce. Mix the mustard, honey, mayonnaise and steak sauce in a shallow bowl. Set aside 3 T of sauce in a small bowl. Dip the chicken in the shallow bowl, covering with sauce. Grill over indirect heat for 20-30 minutes, or until cooked through. Turn occasionally. Remove from heat when done and top with reserved sauce.

Grilled Shrimp Scampi

Use these tasty shrimp for an appetizer or as the main dish. In a large glass bowl, mix ¼-cup olive oil, 1/4-cup lemon juice, 3 T chopped fresh Italian parsley, 3 T minced garlic and ground black pepper. In a large glass bowl, combine olive oil, lemon juice, parsley, garlic and pepper. Toss in shrimp to coat and marinate refrigerated for 30 minutes. Skewer shrimp and grill until opaque.

Coconut-Grilled Corn

Enjoy corn in a whole new light. Husk 4 ears of corn. Combine ¾-cup unsweetened coconut milk, 2-4 T light brown sugar, 2 bay leaves and ¼-teaspoon salt. Simmer ingredients over medium heat until sugar dissolves. Remove from heat and cool to room temperature. Grill corn on oiled grates while basting with coconut mixture until browned on all sides.

Banana Boats

End your meal with this tasty, grilled dessert. You will need 4 ripe, unpeeled bananas, 4 T mini marshmallows and 4 t miniature semi-sweet chocolate chips. Cut banana ½-inch deep lengthwise, reserving ½-inch uncut sections at both ends. Insert 1 t chocolate chips and 1 T marshmallows in each banana. Envelope bananas in aluminum foil. Grill until marshmallows are golden brown and chocolate melts.
